Ingredients
1 pound ground lamb
1/3 cup panko bread crumbs
1 large egg, room temperature
1/4 cup finely chopped onion
3 tablespoons minced fresh parsley
3 garlic cloves, minced
1 teaspoon salt
1 teaspoon ground coriander
1/2 teaspoon ground cumin
1/2 teaspoon paprika
1/4 teaspoon pepper
1/8 teaspoon cayenne pepper
Directions
Preheat oven to 375°. Fit a wire rack inside a 15x10x1-in. baking sheet; coat with cooking spray.
In a large bowl, thoroughly combine all ingredients. Form into 2-in. meatballs. Line on prepared wire rack with 1-in. space in between. Bake 18-22 minutes or until cooked through.
