Pizza Frittata

A crustless, egg-based dish combining pizza toppings with the structure of a frittata — a low-carb, high-protein breakfast or brunch option.

Ingredients

  • 6 ounces philadelphia cream
  • cheese, softened
  • 6 eggs
  • 1/4 teaspoon salt
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon dried oregano
  • 2 tablespoons butter
  • 1 1/2 cups sliced fresh
  • mushrooms
  • 1/2 cup chopped green peppers
  • 24 slices oscar mayer

Directions

  1. Pepperoni, coarsely chopped
  2. Beat cream cheese, eggs, salt and seasonings until well blended.
  3. Melt butter in 10-inch ovenproof skillet on medium heat. Add
  4. mushrooms and peppers; cook and stir 5 min. or until crisp-tender.
  5. Stir in pepperoni and cream cheese mixture. Cover; cook 5 min. or
  6. until center is almost set.
  7. Heat broiler. Uncover frittata. Broil, 6 inches from heat, 2 to 3 min.
  8. or until golden brown.
