Potato Crust Pizza

A pizza with a crust made from shredded potatoes for a unique twist.

Ingredients

  • 1 pound sweet italian sausage,
  • casings removed and crumbled
  • 6 cups frozen shredded hash
  • brown potatoes, thawed
  • 2 cups shredded mozzarella
  • cheese, divided
  • 1/4 teaspoon salt
  • 4 roma (plum) tomatoes
  • 1 (4 ounce) can sliced
  • mushrooms, drained

Directions

  1. Preheat the oven to 425 degrees F (220 degrees C). Coat a 16 inch
  2. pizza pan with nonstick cooking spray.
  3. Place sausage in a skillet over medium-high heat. Cook, stirring to
  4. crumble, until evenly browned. Drain grease, and set aside.
  5. In a large bowl, toss together the hash browns, salt, and 3/4 cup of
  6. the cheese until evenly blended. Spread in an even layer on the
  7. pizza pan, and pack down. Slice tomatoes thinly, and set on paper
  8. towels to drain. This will keep them from being watery when they
  9. cook.
  10. Bake for 30 to 35 minutes in the preheated oven, until the crust is
  11. nicely browned on the top and bottom. Remove from the oven, and
  12. arrange tomato slices all over the pizza. Sprinkle the remaining
  13. cheese, mushrooms and sausage evenly over the pizza. Return to
  14. the hot oven and bake for another 5 to 10 minutes, until cheese is
  15. melted. Cool for at least 5 minutes before cutting into slices.
