Tequila Lime Pork Tenderloin

This tequila-lime pork tenderloin is full of flavor thanks to an overnight soak in a mixture of tequila, citrus juice, cilantro, green chiles, and other seasonings. If you don't want to cook both tenderloins at once, grill one and freeze the other for future use.

Ingredients

  • 1 cup fresh lime juice
  • ½ cup tequila
  • ½ cup orange juice
  • ¼ cup chopped fresh cilantro
  • 2 tablespoons chopped green chiles
  • 1 ½ tablespoons chili powder
  • 1 tablespoon honey
  • 1 teaspoon minced garlic
  • 1 teaspoon salt
  • ¾ teaspoon ground black pepper
  • 2 (1 1/2 pound) pork tenderloins

Directions

  1. Whisk lime juice, tequila, orange juice, cilantro, chiles, chili powder, honey, garlic, salt, and pepper together in a bowl; pour into a 1-gallon resealable bag. Add pork tenderloins, coat with marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 8 hours.
  2. When ready to cook, preheat an outdoor grill for high heat and lightly oil the grate.
  3. Remove tenderloins from marinade and shake off excess. Discard remaining marinade.
  4. Cook tenderloins on the preheated grill, turning occasionally, until meat has reached an internal temperature of 145 degrees F (63 degrees C), about 20 minutes.
